Title: Diet-Lovers Potato "Cream Cheese" Casserole

3mdPotatoes; cooked & mashed w/
  Skim milk
3 1/2ozNeufchatel cheese
1 Egg; lightly beaten
2tbOnion; chopped
1tbParsley; chopped
  Paprika

Combine mashed potatoes and cheese, beating until well blended. Stir in egg, onion and parsley. Spoon into well-greased 1-quart casserole dish. Sprinkle with paprika.
